Creamy Limon Freeze

Hello friends. About a year ago I shared a wonderful treat at Today’s Creative Life blog. My husband reminded me of it while talking about this treat to a friend and telling them how much he loves it Then I thought that you might have missed, so decided to share with you today. 😉

 When our older 2 children were little we had the opportunity to live in Mexico for 15 mos. on a job with my husband’s company. During that time I became friends with a wonderful woman who became one of my best friends ever and took me under her wing. She taught me how to make a great many delicious dishes, and while getting ready for a big get together one day, taught me how to make this simple, yet yummy and refreshing dessert. Since lime and lemon are a flavor of weekness for me, I have always enjoyed this delectable dessert. The simplicity of it makes it a go to recipe any time I know we need a delicious dessert for company. Here’s how it’s made:

Creamy Limon Freeze
Ingredients:
1 pkg. Shortbread cookies or vanilla wafers
2 cans sweetened condensed milk
2 tsp. vanilla
1/3-1/2 C. lime (or to taste)
lime slice for garnish
Layer cookies in 2″ deep dish till bottom is covered.
                              Squeeze lime juice into measuring cup.
 Add juice, sweetened condensed milk, and vanilla in mixing bowl.
                         Mix until well blended 
Spread over cookie layer, cover, and freeze until firm (about 4 hours or over night).
 Serve and enjoy! 
This dessert is loaded with zesty flavor. The perfect cool treat to cap off a wonderful dinner on a summer evening. I hope you will enjoy it as much as we do.
